There’s something special about a galette—rustic, simple, and effortlessly beautiful. This gluten-free apple galette is one of my favourite ways to showcase fresh apples. It has all the charm of apple pie without the fuss of a lattice top or crimped edges. Just roll out your dough, pile on the apples, and fold the edges over. Easy, approachable, and always a crowd-pleaser.

The filling is lightly spiced and sweetened to let the apples shine, while the crust is flaky, buttery, and gluten-free (of course!). Whether you’re baking in peak apple season or just craving something cozy, this galette hits all the right notes.

This gluten-free apple galette has a texture that’s somewhere between a flaky pie and an apple turnover. The crust crisps up beautifully in the oven, giving you those golden, buttery layers without the need for a pie dish. It’s also a bit lighter and quicker to prepare than my traditional apple pie. The filling is slightly different too—less saucy, with the apples holding their shape for a more rustic, bakery-style finish. It’s a great alternative when you want that classic apple flavour in a more casual, quick-to-make dessert.

ingredients

  • Gluten Free Pie Crust: I have two recipes for you to try out. All butter pie crust or the flaky pie crust.
  • Apples: I prefer to use gala apples
  • Cinnamon
  • Lemon Juice
  • Brown Sugar
  • Butter
  • Egg Yolk

Tools

  • Rolling Pin: This is the one I use. The marble keeps the pie crust cool. If it is very hot in my home, I will even put it in the fridge while my pastry is resting in the fridge as well to keep everything very cold when I am rolling it out.
  • Rolling Mat: This keeps everything clean while you are rolling out the dough

what is a galette?

A galette is a free-form, rustic-style tart made with a single sheet of pastry dough that’s folded up around the edges of the filling. Unlike a traditional pie, it doesn’t require a pie dish or fancy crimping—just roll, fill, and fold.

Galettes can be sweet or savoury. A sweet galette, like your gluten-free apple version, is typically filled with fruit (apples, berries, peaches, etc.), a bit of sugar, and warm spices. A savoury galette might include ingredients like cheese, vegetables, or herbs.

The beauty of a galette lies in its imperfect, homemade charm—it’s meant to look rustic and relaxed, yet it still delivers big on flavour and flakiness.


Storing

Freezing:
You can freeze the baked galette for up to 2 months. Wrap it tightly in plastic wrap and foil, then freeze. To serve, thaw in the fridge overnight and reheat in the oven to bring back that flaky crust

At Room Temperature:
If you plan to eat it within a day, you can leave the galette loosely covered with foil or a clean kitchen towel on the counter. This keeps the crust crisp while protecting it from drying out.

In the Fridge:
For longer storage (up to 3 days), place the galette in an airtight container or wrap it in foil and store in the fridge. The crust may soften slightly, but it will still taste great. Reheat in the oven at 300°F (150°C) for 10–15 minutes to refresh the texture.

This rustic gluten-free apple galette features tender spiced apples wrapped in a flaky, buttery crust—easy to make and perfect for any season.

Ingredients

  • 1 Chilled Pie Crust
  • 3 Gala Apples (Peeled, Cored and Sliced)
  • 55 Grams Brown Sugar
  • ½ Lemon – Zested
  • ½ Lemon – Juiced
  • 3 Grams Cornstarch
  • 1 Gram Cinnamon
  • 1 Egg – Yolk
  • 3 Grams Butter

Instructions 

  • Mix up your favourite pie crust recipe and put it into the fridge to chill.
  • Preheat the oven to 400F.
  • Mix together the peeled, cored and sliced apples, corn starch, brown sugar, cinnamon and lemon juice/zest. Stir to evenly coat the apples with the sugar and cinnamon mixture.
    3 Gala Apples, 55 Grams Brown Sugar, 1/2 Lemon – Zested, 1/2 Lemon – Juiced, 3 Grams Cornstarch, 1 Gram Cinnamon
  • Roll out the pie dough on a piece of parchment paper, so you can move it to the baking sheet easily.
    1 Chilled Pie Crust
  • Pour the apples into the center of the pie dough. Spread it out with enough room on the edges. Fold the pie dough up and over the apples. This should look organic and rustic.
  • Take the butter and dot the top of it.
    3 Grams Butter
  • In a small bowl, whisk the egg yolk and brush it on with a pastry brush on only the pie crust.
    1 Egg – Yolk
  • Slide this onto a baking sheet and put it into the oven. Bake for 35 minutes or until the crust is golden brown.
    Wait until it cools, serve with ice cream or as is. Enjoy
