After making homemade French fries I had a bunch of oil in my Dutch oven already heated up and ready to go. I was craving a donut but didn’t have any proofing. I had a couple apples and threw together a quick batter to create easy and delicious donuts! These gluten free Apple fritters take a couple of apples, and other ingredients you should have in your pantry at all times to create these delicious donuts.

One bowl wonder

After dinner on the weekend I am always looking for a sweet treat to make for Chris and I. These donuts use standard ingredients you can find in your pantry, and some oil to fry them. Even if you do not have oil to fry them, you could pan fry them but you might not get the same texture. This recipe combines all ingredients into one bowl in a matter of seconds. There is no waiting for the dough to proof, you mix everything, spoon it into the hot oil and wait until cooked.

Tart and sweet.

Deep fried goodness

Deep frying adds the texture you are after, the crunch, the soft pillow, the donut! I wait until they are golden brown before taking them out of the oil. I set them to drip excess oil off the donuts and then dunk them into an icing sugar glaze. The glaze adds the sweetness that these donuts deserve! When you bite into the donut you will get chunks of soft but crunchy apple, along with a cinnamon donut, it is best of both worlds!

I usually make a batch of these even if it is just Chris and I…. But then there is a lot of leftovers for us. These make fantastic little snacks or a sweet treat for breakfast. If you think you are going to have some leftover, you can stop glazing all of the donuts and then air fry them in the morning. This will crisp the, back up to normal and then dip in leftover glaze. If you glazed them all and need to reheat in the morning, you can still air fry them, it will just make it a bit messier from the glaze melting.


Gluten Free Apple Fritters

Prep Time 10 minutes
Cook Time 15 minutes
Total Time 25 minutes
Servings 24 Donuts
Fresh and warm donuts with a sweet glaze to create a gluten free spin on a traditional donut.

Ingredients

  • 1 ½ Cup Bob’s Red Mill 1-1 Gluten Free Flour
  • 1 ½ Tsp cinnamon
  • 2 Tsp baking powder
  • ½ Tsp salt
  • 2 eggs
  • Cup milk
  • 2 Tbsp brown sugar
  • 1 Tbsp oil
  • 2 Tsp vanilla
  • 2 apples, peeled and finely diced

Icing

  • 3 Cups Icing Sugar
  • 3 Tbsp milk or water
  • ½ Tsp vanilla

Instructions 

  • Heat up a deep fryer or a Dutch oven filled 1/3 full of vegetable oil.
  • Peel apples, and cut into small pieces.
    2 apples, peeled and finely diced
  • Whisk together all ingredients in a large mixing bowl.
    1 1/2 Cup Bob’s Red Mill 1-1 Gluten Free Flour, 1 1/2 Tsp cinnamon, 2 Tsp baking powder, 1/2 Tsp salt, 2 eggs, 2 Tbsp brown sugar, 1 Tbsp oil, 2 Tsp vanilla, 2/3 Cup milk
  • Once oil reaches about 360 degrees, take a spoonful of the donut mix and drop it into the oil. Do so until you have enough donuts that you are not crowding the pot.
  • Flip the donuts in the oil to get an even brown to the donuts.
  • Once cooked, take them out of the oil and put on top of a wire rack with a cookie sheet underneath to catch the oil dripping off.
  • While cooling, mix up the icing ingredients together.
    3 Cups Icing Sugar, 3 Tbsp milk or water, 1/2 Tsp vanilla
  • Let the donuts cool until you can handle. Dip the donuts fully in the icing and then put to dry back on the wire rack.
  • Enjoy!
