Strawberries are the star
- This roasted strawberry jam has minimal ingredients – sugar, vanilla and strawberries. It truly makes strawberries the star of the jam without gelatin, pectin for any other additives.
- If you use frozen strawberries, it might take a bit longer because of the additional moisture content. I would stir it sooner than fresh strawberries to try and break them up by squishing them between your fork (or spoon) into the pan.
Creating the jam
This roasted strawberry jam is very simple to mix. You mix all the ingredients in an oven proof dish and put it in the oven… that’s it!
I typically like my strawberry jam to have it broken down quite a bit, so I only have a couple of chunks of strawberry. To do this, you can take a fork (or a spoon) and while stirring the mixture, squish the strawberries to break them apart. Or, you can leave it as chunky as you would like. It is all personal preference.

Storing
There are a couple ways to store this jam.
I typically make it and use it right away. To do this, I put it in a glass container with a lid, and put it in the fridge. It should last 2-3 weeks by doing this.
I have also frozen this jam, it was inside a baked Alaska cake and it froze beautifully!
Another way would be to can it. If you are caning it, I would remove it early from the oven. This is because the water bath will continue cooking it. It will be pipping hot, and put it directly into sanitized mason jars with the lids. Then you would put it into the water bath to seal the jars.
I have also put hot jam into a hot mason jar, and sealed it up. I then turned it upside down until it was cool. The temperature of the jam and the jar sealed itself.


Roasted Strawberry Jam
Ingredients
- 1 lb Strawberries
- 100 grams white sugar
- splash Vanilla
Instructions
- Preheat your oven to 350F
- Wash, cut the tops of the strawberries and cut them in half.1 lb Strawberries
- Add the cut strawberries to an oven proof pan along with the sugar and vanilla.100 grams white sugar, splash Vanilla
- Stir to combine everything.
- Once the oven is preheated, place the pan into the oven for 1 hour.
- Stir the mixture and squish the strawberries to release the juices and break them down.
- I had to cook mine for another 25 minutes to cook off most of the juices. Keep an eye on the jam after an hour.
- Once most of the juices are cooked off, turn off the oven and let the pan sit inside for 15 minutes.
- Remove the pan from the oven and place it in a glass container to store in your fridge until it is cool.
