I love baking blondies because they’re one of those easy, no-fuss recipes that always impress. You don’t need a mixer or any complicated steps, just one bowl, a whisk, and a baking pan. The result is a rich, golden blondie that’s perfectly sweet with that irresistible mix of chewy centre and crisp edges.

The toffee and chocolate combination gives them a little extra something special. They’re perfect for bringing to a gathering, packing in lunches, or keeping on the counter for when you want a little afternoon treat (and trust me, you will).

What is a blondie?

A blondie is basically the brownie’s vanilla cousin. Instead of cocoa or melted chocolate in the batter, blondies get their rich, caramel-like flavour from brown sugar and butter. The result is a chewy, buttery bar with a soft centre and slightly crisp edges.

They have that same dense, fudgy texture we love in brownies but with the warm sweetness of toffee, caramel, and vanilla instead of chocolate. You can keep them simple or add in all kinds of mix-ins — like chocolate, nuts, or toffee bits (like in this recipe!).

What makes these special?

Not only are they made with love… they are made with homemade toffee bits. Yes, you can buy toffee bits/chips at the store, but they don’t have the depth of flavour that browning the butter and making your own. It honestly takes a couple mins, and you can make a big batch and store them in an air tight container to use in other things. Some things that come to mind are: on top of ice cream, in cookies, decorating cupcakes and anywhere else you would love that toffee crunch.

Storing

Once cooled, store the blondies in an airtight container at room temperature for up to 4 days.

For longer storage, refrigerate for up to a week or freeze for up to 2 months. Layer them between parchment paper in a freezer-safe container to keep them from sticking together. Thaw at room temperature before serving—or enjoy them slightly chilled for an extra chewy texture.

Ingredients

Homemade Toffee Bits

  • 56 Grams Butter
  • 100 Grams Brown Sugar
  • 1 Gram Salt

Blondies

  • 115 Grams Butter
  • 150 Grams Bob’s Red Mill 1-1 Gluten Free Flour
  • 3 Grams Instant Coffee
  • 1 Gram Salt
  • 200 Grams Brown Sugar
  • 1 Egg
  • 1 Egg Yolk
  • 3 Grams Vanilla
  • 110 Grams Chocolate (chips will work, but shards from cutting a bar is best)
  • 1 Batch Homemade Toffee Bits

Instructions 

Toffee Bits

  • Cover a baking sheet with parchment paper and set aside.
  • In a pot, add in butter, brown sugar and salt. Mix as the butter melts and everything comes together. Once it is fully incorporated and bubbling to around 300F, pour it onto the prepared baking tray. Smooth it out as thin as you can get it. And set it aside for it to cool.
    56 Grams Butter, 100 Grams Brown Sugar, 1 Gram Salt
  • Once the toffee is cool and hard. Take your hands and break it up into shards. You can also use a rolling pin, blender or pallet. I like to keep them a decent size so they add some texture throughout.

Blondies

  • Preheat the oven to 350F. Prepare an 8”x8” pan with parchment paper.
  • In a glass bowl, add in the butter. Place it into the microwave for 30 seconds at a time until it is fully melted.
    115 Grams Butter
  • Whisk in the brown sugar, vanilla, instant coffee and salt.
    3 Grams Instant Coffee, 1 Gram Salt, 200 Grams Brown Sugar, 3 Grams Vanilla
  • Next add in the egg and the egg yolk.
    1 Egg, 1 Egg Yolk
  • Add in the flour, and mix until just combined.
    150 Grams Bob’s Red Mill 1-1 Gluten Free Flour
  • Add in the chopped up chocolate into chunks and the toffee bits. Mix until just combined.
    110 Grams Chocolate (chips will work, but shards from cutting a bar is best), 1 Batch Homemade Toffee Bits
  • Pour everything into the prepared baking tray. Bake for 20 minutes. You will test it just like brownies. Put a tooth pick into the middle. If it comes out clean with a tiny bit of dough, it is done. That way it says brownie like texture.
  • Let it sit into the baking dish to cool. Once cool, remove it from the baking tray, and cut into squares. Enjoy!
