What are Jam Bars?
- The buttery shortbread cookie dough is on the base and topped throughout the bars with the shortbread dough. The jam layer adds a burst of flavour and sweetness throughout every bite!
- One of the best things about gluten free jam bars is their versatility. You can easily customize them with your favourite types of jam to suit any taste or occasion. Strawberry, raspberry, blueberry, or rhubarb jams are all excellent choices, but don’t hesitate to experiment with unique flavours like fig, cherry, or mixed berry. These bars are not only delicious but turn out looking different every time because of the added crumble overtop of the jam.
Ingredients
This recipe uses ingredients most of us have in our pantries.
- Bob’s Redmill 1-1 Gluten Free Flour
- Homemade or store bought strawberry jam
- Vanilla Bean Paste or Vanilla Bean Extract
- Salt
- Cinnamon
- Brown Sugar
- Oat Flour: This is used to give the bars a great texture, and bring in a balanced oat flavour. If you cannot have oats, you can replace this with equal weight of Bob’s Redmill 1-1 Gluten Free flour.

Homemade or store bought jam
I have made these jam bars two different ways, one with a jar of jam from the store, and the other with homemade jam. Homemade jam such as my roasted strawberry jam does take time to make, however it is worth it when using that jam in this bar recipe. It is not overly sweet, and tastes more delicious!
There is nothing wrong with store bought jam either. There are some great ones out there. I tend to look for the ones with little to no added sugar, so you really get to taste the fruit instead of the sweetness.
Storing
I know sometimes with gluten free bread that storing it can be complex for it to not go dry and hard. This is just as easy as making the bread!
I have never tried freezing these bars – we eat them too fast! Jam does surprisingly well with freezing. If I were to freeze them, I would allow them to cool to room temperature and cut them into squares. Then I would wrap each square in parchment paper and place inside a freezer zip lock bag. When you are ready to eat one, I would take it out and microwave it for 30 seconds and then check to see if it is warm. Alternatively you could live it in the fridge overnight to defrost.


Gluten Free Strawberry Jam Bars
Ingredients
- 250 grams Bob’s Red Mill 1-1 Gluten Free Flour
- 110 grams Light Brown Sugar
- 1 pinch Salt
- 3 grams Cinnamon Powder
- 225 grams Butter
- 1 splash Vanilla
- 340 grams Strawberry Jam
- 20 grams Oat Flour
Instructions
- Preheat oven to 350F. Line an 8’x8’ square pan with parchment paper, both on the bottom and the sides.
- In a food processor, add flour, light brown sugar, salt, cinnamon, butter and vanilla.250 grams Bob’s Red Mill 1-1 Gluten Free Flour, 110 grams Light Brown Sugar, 1 pinch Salt, 3 grams Cinnamon Powder, 225 grams Butter, 1 splash Vanilla, 20 grams Oat Flour
- Pulse until all ingredients are combined and it comes together in almost a single clump.
- Reserve about 1 cup of the dough for the top and put aside.
- In the prepared pan, press the dough evenly into the bottom of the pan with your fingers.
- Spread the strawberry jam evenly over the top.340 grams Strawberry Jam
- Take chunks of the reserved dough and sprinkle it over the top. You will have some strawberry jam showing and that is how it is supposed to be.
- Bake for 35-40 minutes until it is golden brown and the jam is bubbling.
- Allow the bars the cool inside the pan before removing. It will firm up as it cools.
- Once it is cooled, cut into bars and enjoy!
