I have a love, hate relationship with swiss meringue buttercream. I love the silk texture, the melt in your mouth, the sweet but not too sweet taste. But I hate that if your temperatures are not just right, then it takes more work to get it to become perfect. This is why I have created some tips below on how to make sure your icing is successful! Even if it looks like you messed it up, DO NOT throw it out, it can be brought back to life! This will soon be your favourite icing to eat too!

Wether you are heading to a brunch, or looking for something to pair with your morning tea, these white chocolate raspberry scones will do the trick. These scones are not only easy to whip up with only one bowl, they also feature my favourite scone combination – white chocolate and raspberry.

This recipe came together when I had a craving for something delicious, a couple lemons to use up and pure love for anything lemon meringue related. The fresh lemon, with the sweet meringue and the crunch of the biscotti…. Heaven! Typically I love dunking biscotti into coffee, but with the lemon flavour, these are best dunked in earl grey tea!
